Some people are not fond of clams and mussels and Alvin is one of them. Shellfish can play a healthy part in our diets because most of them (except shrimps) are low in cholesterol. They are also good sources of protein. Alvin is very much aware of these health benefits so he tries his best to get used to the peculiar shellfish taste. In this menu, you can use sea bass, pomfret, cod, halibut, red snapper, sole or even tilapia. This seafood stew is great for family dinners and is easy to prepare and cook!

Ingredients
  1. 4 tablespoon olive oil
  2. 2 carrots, peeled and diced
  3. 1 onion, peeled and chopped
  4. 2 cloves garlic, minced
  5. 10 leaves of basil, chopped
  6. 2 teaspoon tomato paste
  7. 1 can (28oz) diced tomato
  8. 4 cups chicken stock
  9. 1 1/2 cup white wine
  10. 450g clams (manila), scrubbed clean
  11. 450g shrimps, peeled and deveined
  12. 450g fish fillet, cut around 2 inches
  13. 1 teaspoon fennel seeds
  14. 1/2 teaspoon of dried oregano
  15. 1/2 teaspoon of dried thyme
  16. Dash of Tabasco
  17. Salt and pepper to taste
  18. 8 lemon wedges
  19. shaves of parmesan cheese
Instructions
  1. Heat olive oil in pot, large saucepan or Dutch oven over medium heat. Sauté carrots and onion for 5 minutes. Add the garlic, fennel and basil. Sauté for another 3 minutes.
  2. Add the tomato paste, tomato sauce, chicken stock, oregano, thyme and tabasco, and boil for 10 minutes.
  3. Pour in the wine and add the clams, cover and cook until most of the shells have opened, about 5 minutes.
  4. Add the shrimp and fish, and cook for another 3-5 minutes.
  5. Serve in a bowl and garnish with lemon wedge and shaves of parmesan cheese.
