After my job interview, Alvin and I met at Baja Fresh located near his office for some snacks. The restaurant serves traditional Tex-Mex food. I just recently saw Baja Fresh in the TV program “Undercover Boss USA” so I was quite surprised that they already have an outlet here in Singapore. I distinctly remember this particular episode because it featured a Filipino immigrant staff who just came to the United States.

At the Bras Basah branch (Rendezvous Hotel), they have set lunch promotion for only S$9.95 which includes burritos, quesadillas, tacos and salads. We ordered Quesadilla which is basically a folded grilled tortilla filled with cheese and chicken with guacamole, fresh pico de gallo and sour cream on the side. The portion is huge if you have a small appetite.  Their serving is tasty, well-seasoned and good value for money!

We still couldn’t get over our Mexican food craving, so I prepared a Chicken Fajitas for our next dinner. This dish is perfect for a lazy night dinner. Though preparation (like chopping) might take you 10-20 minutes, the cooking time is short. It’s a perfect meal for an easy and healthy weeknight dinner! It’s also a fun dinner because you need to fill-in your own tortillas. Have fun!

Ingredients
  1. Chicken Breast, debone and sliced
  2. 1 teaspoon salt
  3. 1 teaspoon cumin
  4. 1 teaspoon paprika
  5. 1 teaspoon dried oregano
  6. 1/2 teaspoon garlic powder (optional)
  7. 1 lime juice
  8. Olive oil
  9. 2 onions, peeled and sliced
  10. 1 green bell pepper, sliced
  11. 1 red bell pepper, sliced
  12. 4 flour tortillas
  13. 1 lime juice, cut into wedges
  14. 2 tablespoon sour cream
Salsa
  1. 1 onion, chopped finely
  2. 2 tomatoes, seeded and chopped finely
  3. 1 tablespoon cilantro, seeded and chopped finely
  4. 1 red chili (preferably jalapeno if available), seeded and chopped finely
  5. 1 tablespoon freshly squeezed lime juice, or more to taste
  6. Salt to taste
Guacamole
  1. 1 avocado, halved, seeded, peeled and chopped
  2. 1 tomato, seeded and chopped finely
  3. 1 tablespoon cilantro, seeded and chopped finely
  4. 1/2 red chili (preferably jalapeno if available), seeded and chopped finely
  5. 1 tablespoon freshly squeezed lime juice, or more to taste
  6. Salt to taste
Instructions
  1. In a bowl, combine the salt, cumin, paprika, dried oregano, garlic powder. Add the chicken and squeeze half of the lime juice and a drizzle of olive oil. Mix well. Marinate for at least 10 minutes.
  2. For the salsa, combine the chopped onion, tomatoes, cilantro, red chili and lime juice in a bowl. Season with salt and pepper. Stir and mix well. Taste and adjust the flavors, if needed.
  3. In a preheated grill pan, using a pair of tongs, put the chicken and grill each side. Drizzle with olive oil if needed. Cook each side for 5-6 minutes or until golden. Remove the chicken from heat. Add the sliced onions, green bell pepper and red bell pepper. Drizzle with olive oil if needed. Season with salt and pepper. Keep turning the vegetable until lightly charred to give you a lovely flavor. Add the chicken and squeeze the other half of lime. Cook for another 2 minutes with the vegetables.
  4. For the guacamole, combine the chopped avocado, tomatoes, cilantro, red chili and lime juice in a bowl. Season with salt and pepper. Stir and mix well. Taste and adjust the flavors, if needed.
  5. Warm the tortillas in a microwave or pan.
  6. Serve while hot.
