This Shrimp Fajitas is a twist of the classic Tex-Mex Fajitas recipe, using shrimp instead of chicken or beef. Fajita came from the Spanish word “faja” which means “strip” or “belt”. This recipe is simple and easy to prepare yet healthy and I bet the whole family would love it. Alvin and especially Albert enjoy this type of dish because he can prepare it on his own. It’s like a family activity during dinner.

Ingredients
  1. 500g Shrimp, peeled and deveined
  2. 1 teaspoon salt
  3. 1 teaspoon cumin
  4. 1 teaspoon paprika
  5. 1/2 teaspoon garlic powder (optional)
  6. 1 lime juice
  7. Olive oil
  8. 2 onions, peeled and sliced
  9. 1 green bell pepper, sliced
  10. 1 red bell pepper, sliced
  11. 4 flour tortillas
  12. 1 lime juice, cut into wedges
  13. 2 tablespoon sour cream
  14. Salsa
  15. 1 onion, chopped finely
  16. 2 tomatoes, seeded and chopped finely
  17. 1 tablespoon cilantro, seeded and chopped finely
  18. 1 red chili (preferably jalapeno if available), seeded and chopped finely
  19. 1 tablespoon freshly squeezed lime juice, or more to taste
  20. Salt to taste
  21. Guacamole
  22. 1 avocado, halved, seeded, peeled and chopped
  23. 1 tomato, seeded and chopped finely
  24. 1 tablespoon cilantro, seeded and chopped finely
  25. 1/2 red chili (preferably jalapeno if available), seeded and chopped finely
  26. 1 tablespoon freshly squeezed lime juice, or more to taste
  27. Salt to taste
Instructions
  1. In a bowl, combine salt, cumin, paprika and garlic powder. Add the shrimps and squeeze half of the lime juice and a drizzle of olive oil. Mix well. Marinate for at least 10 minutes.
  2. For the salsa, combine chopped onion, tomatoes, cilantro, red chili and lime juice in a bowl. Season with salt and pepper. Stir and mix well. Taste and adjust the flavor, if needed.
  3. In a preheated grill pan, using a pair of tongs, put the shrimps and grill each side. Drizzle with olive oil if needed. Cook each side for 5-6 minutes or until pinkish. Remove the shrimp from heat. Add the sliced onions, green bell pepper and red bell pepper. Drizzle with olive oil if needed. Season with salt and pepper. Keep on turning the vegetable until lightly charred to give you a lovely flavor. Add the shrimps and squeeze the other half of lime. Cook for another 2 minutes with the vegetables.
  4. For the guacamole, combine the chopped avocado, tomatoes, cilantro, red chili and lime juice in a bowl. Season with salt and pepper. Stir and mix well. Taste and adjust the flavor, if needed.
  5. Warm the tortillas in a microwave or pan.
  6. Prepare your own with the salsa and guacamole. Top with sour cream and squeeze a wedge of lime.
