When we have children, we need to think of ways to “cheat” them into eating vegetables. There will be times when we need to go to great lengths and present veggies on a colorful, entertaining plate to sort of “deceive” our little ones. Many mothers will find creative ways to make their children eat nutritious food because we don’t want them to get sick. This is because when they get sick, it’ll be really painful in our hearts to see them suffer.

Having a very active son like Albert, I need to feed him nutritious and high energy meals to last his busy daily schedule. I’m a working mom now so I can’t eat lunch with him. The lunch portion  at his school’s canteen is not good enough for Albert’s appetite (I’ve seen it; it’s really too little for him). So since breakfast is his first meal of the day and the one that I have control with, I make sure that he gets enough vitamins and nutrients from our breakfast.

Baked Egg in Tomatoes served with Sausage, Toasted Bread, Baby Spinach and Baked Beans

Ingredients
  1. 3 bratwurst sausage, sliced
  2. A drizzle of olive oil
  3. 2 handful of baby spinach
  4. ½-1 can of baked beans (depending with your diet but since we eat less carbs so we only eat half per meal)
  5. 3 whole meal bread
  6. 3 strawberries, sliced (you can serve more if you want)
For Baked Eggs
  1. 3 large tomatoes
  2. 1 tablespoons extra-virgin olive oil
  3. Coarse salt and ground black pepper
  4. 3 large eggs
Instructions
  1. Preheat oven to 205C/400F degrees.
  2. Slice top third off tomatoes and use a small spoon to remove core and seeds.
  3. Arrange in a baking dish, drizzle with oil, and season with salt and pepper.
  4. Roast until tomatoes are tender and caramelized, about 20 minutes.
  5. Crack an egg into each tomato and season with salt and pepper.
  6. Bake until eggs are just set, 7 to 9 minutes more.
  7. Heat a non-stick pan in medium heat and drizzle olive oil.
  8. Toss the slices of bratwurst sausages for 3 minutes.
  9. Toast the bread.
  10. Serve and have a happy morning breakfast!
