Some of us avoided pork during the Lenten Season. Easter Sunday marks the end of this abstinence, and on this special occasion, I prepared the delightful Pulled Pork on Conchiglie for lunch._DSC8709 Pulled Pork

This recipe will give you a juicy, and ‘easy to pull apart’ Pulled Pork with robust flavours. And amazingly, you can use Pulled Pork for lunch, snacks or dinner. So for our Sunday snacks, I surprised Albert with Pulled Pork Burger with Mango Salsa and Cheese. And for our dinner, I prepared something lighter: Pulled Pork on Lettuce with Mango Salsa. What a hearty dinner!

Ingredients
  1. Olive oil
  2. 1.5-2kg pork butt
  3. 10-15 leaves of sage, finely chopped
  4. 2 sprig of rosemary, finely chopped
  5. 5 stem of parsley, finely chopped
  6. salt and pepper
  7. 1 lemon zest and juice
  8. 1 large onion, peeled and finely chopped
  9. 3 cloves garlic, peeled and minced
  10. 1-2 carrot, peeled and diced
  11. 2 stalk of celery, diced
  12. 2 envy apple, peeled and diced
  13. 2 tablespoon apple cider vinegar
  14. 2 cups of apple juice
  15. 300g cherry tomatoes, halves
To serve
  1. 500g Conchiglie pasta
  2. Grated parmesan cheese
Instructions
  1. Preheat oven to 200C/400F.
  2. In a bowl, mix 1 & 1/2 teaspoon salt, 1/2 teaspoon pepper, and chopped herbs. Season pork on both sides with the dry herb mixture. Set aside.
  3. In a small baking pan or dish, toss tomatoes in 1 tablespoon olive oil, leftover herb mixture, and season with salt and pepper. Roast for 20 minutes.
  4. Heat olive oil in a medium Dutch oven over high heat until smoky. Sear the pork until golden brown on both sides.
  5. Add celery, carrots, and onions and cook until caramelized. Add garlic and sauté until golden brown.
  6. Add apple juice, apple cider vinegar, lemon zest, lemon juice, apples and return the pork; bring to a simmer on stove for 30 minutes.
  7. Bake in the oven for 1.5 hours or until tender or meat can be easily pulled apart.
  8. Cook Conchiglie according to packaging instruction
  9. Serve with roasted tomatoes, pasta and sprinkle with parmesan cheese.
