Spiced Chicken with Lentils, Black Beans, Carrots, Leeks, Celery and Kale Soup

  1. 1 chicken breast, cut in chunks
  2. 1/2 tsp paprika
  3. 1/2 tsp ground cumin
  4. 1/2 tsp turmeric
  5. 1 onion, chopped
  6. 2 garlic cloves, minced
  7. 1 tbsp olive oil
  8. 2 carrots, diced
  9. 2 celery stem, diced
  10. 2 leeks, sliced
  11. 1 can lentils
  12. 1 can black beans
  13. a bunch of kale, stemmed and chopped
  14. 3 cups chicken broth
  15. 5 cups water
  16. Salt and pepper
  1. Mix paprika, cumin, turmeric, 2 pinch of salt, and a pinch of ground pepper.
  2. Season chicken with the mixed spices.
  3. Heat a large pot with olive oil in medium heat. Add the chicken chunks without overcrowding - do in batches if needed. Lightly brown the chicken and set aside.
  4. Add onion and garlic until the onion softens. Add leeks, carrots and celery and saute for 5 minutes.
  5. Add the chicken, black beans, lentils, chicken broth and water. Simmer for 30 minutes.
  6. Add kale and stir for a minute. Add salt and pepper if needed.
  7. Serve while hot.
