Ingredients
- 1 chicken breast, cut in chunks
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 carrots, diced
- 2 celery stem, diced
- 2 leeks, sliced
- 1 can lentils
- 1 can black beans
- a bunch of kale, stemmed and chopped
- 3 cups chicken broth
- 5 cups water
- Salt and pepper
Instructions
- Mix paprika, cumin, turmeric, 2 pinch of salt, and a pinch of ground pepper.
- Season chicken with the mixed spices.
- Heat a large pot with olive oil in medium heat. Add the chicken chunks without overcrowding - do in batches if needed. Lightly brown the chicken and set aside.
- Add onion and garlic until the onion softens. Add leeks, carrots and celery and saute for 5 minutes.
- Add the chicken, black beans, lentils, chicken broth and water. Simmer for 30 minutes.
- Add kale and stir for a minute. Add salt and pepper if needed.
- Serve while hot.
