It had been a month since we left Singapore, our home for almost 16 years. Recently, I’ve been overly active in social media to avoid getting homesick and to make myself busy exploring new recipes. That should make me occupied. 

A few days ago, I cooked (or rather prepared since there was really nothing to cook) Smoked Salmon Cranberries Salad and I posted a photo of it right after dinner in my Instagram. Of course, I shared it in my Facebook page as well. My friend Gazzel asked for the recipe. Told her I’d post it soon in my blog so she’d have a reason to visit it. I miss my friends in Singapore. Gazzel had been my Tuesday fitness/breakfast/tea buddy almost consistently for about a year. So, Gazzel this is for you… 

Smoked Salmon Cranberries Salad

Smoked Salmon Cranberries Salad

Serves: 4

Ingredients:

2 tablespoons balsamic vinegar
1 tablespoon honey
1/2 teaspoon wholegrain mustard
3 tablespoon extra-virgin olive oil
1/4 cup dried cranberries
salt and pepper
180 g smoked salmon
1 pack salad green

Instructions:
1.Shake cranberries, balsamic vinegar, honey, mustard, extra-virgin olive oil, salt and pepper in a small jar with lid or just whisk in small bowl.

2. Place salad greens and smoked salmon in a salad bowl, add enough dressing, scoop all the cranberries. Toss to combine. If you have leftover vinaigrette in the jar, you can keep it for your next salad.
