It’s Valentine’s Day and this year, it’s also Ash Wednesday, the first day of Lent so Alvin and I thought of not going out. It’s also the first night of Albert’s year 9 camp and I miss him so much even though most of the time, we are “frenemies”. Without him, our house is so quiet and I don’t have someone to nag things about… hahaha!
So, since we are eating at home on Valentine’s Night.. I thought of just preparing Soba Noodle Salad for the two of us. I’ve seen Gordon Ramsey made this recipe. It’s easy to prepare and has lots of flavors and aroma from ginger, onion, sesame oil and rice vinegar.
Soba Noodle Salad
250g soba noodles
150g kale, stalks removed, leaves shredded
200g snow peas, topped and tailed, halved lengthways
2 carrots, peeled and sliced into ribbons (use a vegetable peeler)
2 spring onions, trimmed and finely chopped
a thumb size fresh root ginger, peeled and finely sliced
1 tablespoon sesame oil
1 1/2 teaspoon rice vinegar
1 1/2 tablespoon soy sauce
1/2 lemon juice
2 sheet of nori seaweed, crushed or sliced thinly
Sea salt and freshly ground pepper
1. Cook soba noodles according to packet instructions. When almost cooked, add kale, snow peas and carrots to to blanch. Drain once the noodles are tender.
2. Add all remaining ingredients to the noodle mixture, season with a little salt and pepper, stir well and serve.
